If you follow me on Instagram (dooooo it) you see my major number of food pics. I've been posting less food on this blog and more on my new blog, The Hungry Foodinista, because I didn't want to keep clashing two very different and exciting worlds, if you know what I mean.
But for those of you who don't read my Tumblr and still love my food posts, this is a recipe for you. Acai is a superfood, and has gained massive attention lately for it's major health benefits. There is only 2g of actual sugar per serving, which is practically nothing for a fruit. With tons of antioxidants, acai is a great addition to any diet and especially for people who love taking care of their skin and hair (you can thank the antioxidants for that.)
The first acai bowl I ever made was too runny, since I wasn't familiar with the whole "bowl" idea, it came out to more of a smoothie. Yesterdays concoction was both delicious, nutritious, and a site to look at while eating. A part of me almost felt like I was in Hawaii (as long as you don't look outside while you're eating.) The key is making sure your bowl is thick enough to the consistency of oatmeal, so you don't have to slurp this like a smoothie.
Acai bowl- serves 1
Vegan, gluten-free, paleo
1 packet of Sambazon acai smoothie mix (find these at health food stores/I got mine at Whole Foods)
A few splashes of almond milk/coconut milk (emphasis on few, the less the better because you don't want a runny bowl)
1/2-1 frozen or fresh banana
Optional: honey, stevia, dates, any other fruit, extra coconut milk
Blend in a high speed blender (Nutribullet is fine) and voila!
Top with: goji berries, nuts, coconut, coconut milk, hempseed, flaxseed, chia seed, rawtella, fruit, pomegranate seeds, dates, raisins…anything works!
