Mango Cucumber Salsa

Mangoes are slowly becoming a staple in my household. I was never really a fan of
the fruit, mainly because I never tried one, until recently, when I made a grilled 
swordfish with mango cucumber salsa on top. The best meals/recipes are the ones 
that can be made only with the ingredients in the fridge + cupboard, and don’t take
a lot of thought or prep, but taste amazing. Don’t underestimate the mango. Known
for its exotic and juicy flavor, it is a yummy and healthy addition to any meal. The only
downside is the struggle to actually cut the mango (read instructions here) that I 
still have yet to master. The bright side being you can make this salsa with a few 
ingredients in your pantry and keep it in the fridge for up to a week! Try this on 
grilled fish and chicken for a refreshing flavor. 


I’m gearing up for my trip to Turkey in November (as well as my 16th birthday next


month- finally!) and am getting quite excited. Mainly for the food, which I hear is
fresh, tasty and moderately healthy compared to other countries with greasier and 
more fast food lovers. Since the weather is going to be cold in November, jeans, boots
and sweaters are taking up the majority of my suitcase. The excitement stems from 
looking forward to a full 2 weeks of sightseeing, not working, and splurging on every
food and gift that comes into sight. If you have any recommendations for places to see
when I’m there, please let me know! Traveling is such a luxury, and going out of the 
country on a tour (thank you, Groupon) for 13 days is a blessing. 


Mango cucumber salsa
Gluten-free, vegan, low-calorie 
1 mango (look to make sure yours isn’t hard but quite soft, and the skin is ripe)
1 cucumber, peeled and diced
1/2-1 avocado, diced
optional: pineapple, diced
1/2 diced red onion 
Salt + pepper
1 lime 
optional: cilantro/jalapeño pepper (I prefer my salsa sweeter vs. spicy, so I omit)
Mix all ingredients together starting with the mango, cucumber and avocado and proceed to add in salt, pepper and lime at the end. Refrigerate for up to one week! 
*I tried this with lemon and it wasn’t the same. Limes work best.
