No Bake Raw Bites

I’m a huge foodie when it comes to anything raw. If you didn’t already know,
I recently switched to the paleo diet which is a 180 from vegan (paleo is all
about lean meats, fish, nuts, and little raw food) so the past week has been an
adjustment. I’m not used to eating so much meat! The main reason that I decided
this was the route to go is because my digestive system is very sensitive, and a 
vegan diet did not suit me. My health problems have gone on long enough that 
a major switch was needed. Within 2 days of switching to paleo, every problem 
I used to have disappeared. No longer anything to complain about now! 
The only plus side of a raw diet is no oven. I made these goodies in about
20 minutes, froze them, and they were ready while I ate breakfast. 
However, when I’m in the mood for a sweet treat, you can almost guarantee 
my dessert will be raw/vegan. This is the healthiest route to go instead of 
eating a processed, piece of junk candy bar with not one good-for-you ingredient
in it. These cookies are a re-make of the recipe for Karlie’s Kookies I featured
a while back, and since such an overwhelming and positive response came out
of those, I figured it was time to make a raw, no-bake version that is the perfect
alternative to a sugary energy bar or candy bar. Try one of these balls before/after
 a workout for an energy kick, or add some chia seeds, omit the chocolate and 
indulge in a few for breakfast!
No-Bake Raw Energy Balls
Vegan, gluten-free, low-fat
1 cup oats (I used gluten-free)
1/4 cup almond flour
1/4 cup peanut butter (always try and find PB w/o added sugar)
1/2 cup melted coconut oil
Dash of cinnamon/fresh vanilla
1/4 cup sweetener of choice (I used maple, but agave, honey etc works)
4-5 raw apricots (chopped)
6-8 raw seedless small dates (chopped)
Optional: raw raisins, unsweetened coconut, chocolate chips, nuts…
Pour 1 cup oats into large mixing bowl. Follow with almond flour and dry ingredients.
Add in wet ingredients, vanilla and cinnamon.
Mix together.
Add in raw additions and mix all together.
Take 1 tbsp. of mixture and put into ball form. Continue to do so until bowl is empty.
Place in freezer for 15-30 minutes.
When removing, let thaw for a few minutes before eating.
