I am recovering from another pretty nasty cold that has had
me kept up in bed for the past few days. Can’t figure out if it’s the
weather or what that gives me so many colds a year! What’s better
than making a yummy and healthy dessert once you finally feel well
enough to stand up? Yesterday evening I ordered my food processor
so am very excited to see how much better my recipes will turn out
once it arrives. A key staple for any vegan diet!
Avocados make my top 10 list of favorite foods: creamy, smooth,
subtly rich…delicious on bread as an alternative to butter or put
in a yummy stirfry for a Mexican flare. Of course, chefs have to
think outside the box, and that’s why this recipe is all about taste
over ingredients. The secret to the smoothness and creaminess of
the mousse is avocado. Bet you didn’t see that one coming! And
all you have to do is blend the ingredients in a blender, refrigerate
for less than 30 minutes and you have a dessert full of healthy fats,
a little sweetener and a whole lotta yum.
Most people steer away from foods labeled “fats” like avocados, oils,
nuts etc, which is crazy to me since the foods under that category
are recommended for people trying to LOSE WEIGHT. Not gain it!
Yes, if you have 16 tablespoons of olive oil a day and 7 avocados
I can’t say that you won’t gain weight, but half an avocado-one avo
per day and 1-2 tbsp. of oil in meals (coconut oil happens to be my
favorite, and it’s got great advantages other than cooking too)
will not make anyone fat.
Feel free to get creative with this recipe: add in spices, extra cinnamon,
orange shavings, vegan chocolate chips, some strawberries on the top etc!
Raw vegan gluten-free chocolate mousse
4 1/2 tbsp. unsweetened cocoa powder (the more you add the stronger it is)
4- 4.5 tbsp. honey, maple syrup or agave
1/4 cup coconut milk or dairy free alternative (I used light coconut milk)
1 tsp. cinnamon
1 tsp. nutmeg
Blend avocados in a food processor or blender. Add in cocoa powder,
sweetener, and liquids as necessary (except milk.) Blend together
and add milk a tbsp. at a time until at desired consistency.
You may still taste avocado, but that will disappear once chilled.
Add more sweetener or cinnamon if you like at this point.
Chill in the freezer for 15 minutes. Top with any fruit (raspberries
work well!), a few chocolate chips…up to you. If I had prepared
